Treat Yo Self Berry Cobbler

For a Christmas brunch a few weeks ago I made cobbler and OH MAN I forgot how much I love this stuff. It's like a pie filling but with a sugar cookie crust... serve warm with vanilla ice cream and what is not to love?!?!? Well actually, we served warm with homemade whip cream but still, so delicious.

I started with a basic recipe but tweaked it quite a bit to how I like it. Yes, maybe that's selfish but I'm the one making it so why not?


All right so here is what you'll need...


1 greased 8x8 baking dish


For the filling:

  • 4 cups berries - Your choice! I did equal parts raspberries, blueberries and blackberries

  • 1 tbsp granulated sugar

  • 3 tbsp lemon juice (if you don't like the ZING of lemon, just do all OJ)

  • 3 tbsp orange juice

  • 2 tbsp cornstarch/6 tbsp flour [*optional]

**For the crust:

  • 1 cup flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 3/4 cup unsalted butter, softened

  • 1/3 cup granulated sugar

  • 2 medium eggs

  • 1 tsp vanilla extract

**I like a thicker crust with more coverage so I make a lot of batter to cover the top. If you like a thinner crust then just cut the recipe by either 1/3 or a 1/4.

Berries all prepped and ready to go!

Steps:


Preheat the oven to 375 degrees.


Mix berries, sugar, and juices together and then toss in cornstarch/flour if desired. Pour into prepared baking dish and spread evenly. *Use cornstarch/flour if you prefer a pie-like consistency to your berries.


Using a stand or hand mixer, cream together butter and sugar. On medium speed add in the eggs, vanilla, baking powder, and salt. After that is combined well, add in the flour and mix until smooth. Make sure to scrape down the sides of the bowl to get all the ingredients mixed well.

Batter ready to go on the berries!

Using a large spoon, drop the batter on top of the berries, trying to cover all or most of the surface.


Once you have spooned all the batter on top, put in the oven on the middle rack. Bake for about 35 minutes or until the top is a nice golden brown (I think I ended up baking for almost 45 minutes, but start checking it at 35- it really depends on how dark you like your crust)


Let set for at least 30 minutes before serving to allow it to set a little bit. Serve with whip cream or vanilla cream (or BOTH! lol) and ENJOY!


This is obviously not paleo or clean or whatever you want to call it. But it IS delicious and as far as the spectrum of desserts go, it's not too bad.


Let me know if you try this. It's especially great in early summer when the prices of berries drop but really it's great all year round!
