Mojo Pork Bowls

PaleOMG strikes again folks. I am telling you. If you have not checked her out... DO IT... like now. I'll even make it easy and link to her website HERE. Juli Bauer is the creator of PaleOMG and she's seriously awesome. I've always really liked her but just recently I heard her being interviewed on the Modern Mama's podcast and it made me like her even more. She opens up and talks about the decision to not have children and how this is perceived in society - super interesting!


Anyways- back to food! Whenever I feel like I'm getting in a rut with my dinner routine I go to her website and peruse her recipes. Last week I had a pork shoulder that I needed to use so of course I went to her website and BAM... Mojo Pork Bowls are for dinner.

Now instead of boring you with the recipe, and since I copied it exactly, I am just going to link to her recipe page here... then it also makes you go and check her out if you didn't do it earlier. The pork was nice and tender and nicely flavored, and I think what I liked most about this recipe was that it combined things I would not normally gravitate towards.


I don't have an air fryer so I just fried up the bananas in coconut oil... definitely not as healthy but still delicious! It's worth trying in the bowl, but in the future I would rather just eat these babies on their own. That's mostly because I am just a sucker for fried bananas so it's just a personal preference.


Also, if you are using an instant pot (which I did), I would recommend cubing the pork and then marinating and putting in the pot. I think that this would allow the pork to be a little more flavorful. But again, that's just my personal preference. If you do cube the pork remember to still throw the bone in the instant pot- it adds a lot of great flavor and there's also nutrients that you can get from the the bone that you wouldn't get elsewhere.


This recipe is super easy, low maintenance, delicious an healthy- that's checking a lot of boxes for me! Give this baby a whirl and let me know whatcha think.
