Deconstructed Egg Rolls

I am a sucker for a good egg roll. To date, my favorite ones are from Peking Dragon in Dana Point, or the ones that I make myself. But because the wrapper is not exactly on the menu right now, I decided to make a little deconstructed version and it was REALLY good.

It's super simple so don't overthink it. Here's what I did:


Ingredients

2 pounds ground beef

1 package broccoli slaw

1 head of cabbage

1 package broccoli and cauliflower florets (optional)


Grab a pan and sauté the ground beef over medium heat. I added pepper, garlic, and soy sauce. If you wanted to keep the ingredients "cleaner" you could use coconut aminos instead of the soy sauce. This is all to taste so season how you like it. I used probably about a 1/2 tsp. pepper, one tbs. garlic, and a 1/4 cup soy sauce. I like to use extra soy sauce because after you add the seasoning, you add the cabbage, turn the heat up a little bit, and cover the pan. This makes the cabbage cook nicely and utilize the extra soy sauce for flavor. After about 5 minutes, the cabbage should be cooked. Remove from heat and stir in the broccoli slaw.


Essentially your meal is now ready to eat. We ate this over roasted broccoli and cauliflower (toss in salt and pepper and a little olive oil, roast at 400 degrees for 15-20 minutes), but if rice is in your diet, then eating over some white or brown rice would be delicious!
